Validation, Shelf-Life & Research Studies
Log10® specializes in the development of customized research projects such as validation studies, shelf-life studies and pathogen and probiotic challenge studies.
Validation Studies. Both H.A.C.C.P and FSMA’s Preventive Controls Rules require validation of the CCP’s and Process Preventive Controls in your Food Safety Plan. Log10® can develop a science-based validation study customized to your product(s) and operation(s) and provide a comprehensive validation report ensuring your compliance with these programs.
Shelf-Life Studies. Shelf life is defined as the length of time that a commodity may be stored without becoming unfit for use, consumption, or sale. Shelf-life determination is an integral part of any food safety and quality program as well as a requirement of the Global Food Safety Initiative (GFSI) benchmarked standards. If your need is extending or verifying the shelf-life on an existing product or establishing the shelf-life for a new product, Log10® can develop an accelerated or real-time shelf-life study that is tailored to your company’s needs and product requirements.
Research Studies. Research is a careful consideration of study regarding a concern or a problem using scientific methods and involves both inductive and deductive methods. Whether your research needs are simple or complex, turn to Log10® to develop a scientifically valid research study or implement one that you have already created.

Sensory (Organoleptic) Evaluations & Analysis
Sensory evaluation provides support to research and development, marketing, and quality control and uses sensory science to acquire information about product differences, consumer preferences, and attribute intensities.
Customized evaluations, with trained panelists, can be established and include as many attributes (taste, odor, appearance, texture, etc.) as needed. Microbial & chemical analyses can also be incorporated if necessary. Whether you are developing a new product or improving on a current one, let Log10® develop a sensory evaluation that meets your company’s requirements.
Food Safety Training, Auditing & Consultation Services
In addition to our analytical services, the food safety experts at Log10® can assist with your training, auditing and food safety or quality consultation needs.
Food Safety Training. Certified Lead Instructors can provide HACCP training customized to your operations. Upon course completion, attendees are registered as recipients of accredited HACCP training in the International HACCP Alliance database. Recognized Lead Instructors are also available to train your staff against the Preventive Controls Qualified Individual (PCQI) for Animal Food regulation. Participants in this 2½ day FDA standardized course curriculum will meet the requirements to become a preventive control qualified individual (PCQI).
Food Safety Auditing & Consultation. Food Safety Plan or HACCP program development or review, compliance with USDA or FSMA regulations, development or review of environmental monitoring and sanitation programs and audit preparation assistance against the GFSI benchmarked standards (BRC GS, SQF, PrimusGFS, GlobalGAP, FSSC22000, Canada GAP, BAP, IFS ), are just a few of the areas that we can provide consultation services for. In addition, Log10® conducts Food Safety, GMP, HACCP & FSMA Compliance audits in your operations or can act as an independent 3rd party, leading or conducting internal audits against the requirements you provide.
For facilities operating under or moving to certification against the SQF Food Safety & Quality Codes, Registered SQF Consultants are available on staff to assist you with training, program set-up or reviews, gap assessments or internal audits against the SQF standard. Other areas of expertise include forensic analysis and expert witness testimony as related to food production, food safety and quality.
